The Grand Marlin sits at 400 Pensacola Beach Blvd in Gulf Breeze, right on Santa Rosa Sound, and both the dining room and the deck face open water instead of a parking lot. As a waterfront seafood restaurant and oyster bar, it draws visitors who want a real view with a real meal, and the sound side setting delivers on that promise from lunch through last call. The restaurant’s own tagline puts it plainly: a waterfront seafood and oyster bar built around Santa Rosa Sound, with an on-site bar, The North Drop Bar, and a banquet and private event space rounding out the property.

The idea for The Grand Marlin did not start in a kitchen. It started on a boat, with a group of friends cruising the North Drop, a well known big game fishing ground off the U.S. Virgin Islands. Between the fishing, the fresh catch, and the unhurried pace of Caribbean island life, the group kept returning to the same idea: build a restaurant around that feeling of boats, seafood, good stories, and a stress free lifestyle. The concept took shape over more than a decade of planning before the restaurant finally opened its doors in April 2010. The North Drop name still lives on today, most visibly in the restaurant’s on-site bar of the same name.

Two partners built the concept from the ground up: Bryan Housley and Chef Gregg McCarthy. Housley, a Georgia native, spent more than 30 years in the restaurant industry, including a decade running Ray’s on the River in Atlanta and helping launch its sister property, Ray’s in the City, in 2003. Under his leadership, Ray’s on the River collected more than ten Wine Spectator Awards of Excellence. Chef McCarthy, a Culinary Institute of America graduate, cooked at the Old Ebbitt Grill in Washington, D.C., the Hotel Crescent Court in Dallas, and the James Beard House before serving as corporate executive chef for the Ray’s restaurant group. The two partners spent over a decade refining The Grand Marlin before bringing the concept to the Gulf Coast.

Inside, the kitchen runs on fresh Gulf seafood, adjusting its menu daily to take advantage of whatever the local catch turns up that morning. The oyster bar anchors one side of the dining room, shucking to order, while The North Drop Bar next door pours the cocktail and wine list and keeps its own extended Sunday hours. For groups and celebrations, The Grand Marlin also operates a private banquet and event space, a useful option for a Pensacola Beach rehearsal dinner, a reunion, or a corporate outing that needs a water view. A Ship Store near the entrance sells fishing gear, clothing, and beach accessories, a nod to the restaurant’s boating roots and to the friends who first dreamed it up on the water.

On the menu, dishes are made from scratch, built around what the kitchen considers the freshest seafood and highest quality ingredients available on a given day. Grouper Piccata is one of the standing favorites, a Gulf grouper filet finished with a classic lemon caper butter sauce. Beyond the piccata, expect a coastal Southern lineup that ranges from raw bar platters to grilled and blackened fish, with steaks rounding out the options for anyone traveling with a non-seafood eater in the group.

The Grand Marlin keeps hours built around beach schedules: 11 a.m. to 10 p.m. Monday through Thursday, 11 a.m. to 11 p.m. Friday and Saturday, brunch from 9 a.m. to 2 p.m. on Sunday, and Sunday dinner service from 2 p.m. to 10 p.m. Reservations run through OpenTable, worth booking ahead for a sunset table during the busy summer season.
