About

The Jellyfish Restaurant & Bar built its name on Perdido Key by refusing to specialize in just one style of food, and that range still defines a visit today. Locally owned and operated, the restaurant sits at 13700 Perdido Key Dr in Pensacola and pairs a full sushi bar with an oyster bar, steaks, and Gulf seafood under one roof, exactly the mix its tagline promises: sushi, oysters and seafood on the Key.

Co-owners opened The Jellyfish shortly after Hurricane Ivan tore through Pensacola and Perdido Key in 2004, starting small as a sushi and martini bar before growing into the full-scale restaurant it is now. Co-owner Bryan Minchew has summed up the approach in five words on the restaurant’s own site: “Anything worth doing is worth doing well.” He has explained the thinking behind the menu in more detail as well, saying the partners “wanted a restaurant that has broader appeal than most” and that they “didn’t want to specialize in one or two areas,” aiming instead for “the best sushi, the best steaks, the best oyster bar, and the best seafood, period.” That ambition, in his words, came from wanting “a restaurant that would reflect our professional ambitions,” rather than settling for “a few signature items.”

The kitchen still runs on that founding idea. Guests can start at the sushi bar for rolls and nigiri, move to the oyster bar for a dozen on the half shell, or order straight off the dinner menu for steaks and Gulf seafood, all without switching restaurants. A dedicated kids menu makes it workable for families, and online ordering lets regulars skip the wait for takeout. The restaurant also runs a happy hour Monday through Friday from 1 pm to 5 pm, a good window for anyone stopping in after a morning on the beach, and it offers a military and first responder discount, 25 percent off all day Thursday and 15 percent off on other days of the week.

Location helps the concept work as well as it does. Perdido Key Drive has become something of a seafood corridor, with The Jellyfish sharing the stretch alongside Salty Pearl Raw Bar and The Crab Trap, and Visit Florida’s own guide to the area lists all three among the key’s dining highlights. That kind of company keeps the bar high, and The Jellyfish holds its own by leaning on the breadth of its menu rather than one signature dish, a strategy that has turned it, in the owners’ own words, from a small sushi and martini bar into a premier Pensacola-area dining destination.

The Jellyfish Restaurant & Bar is open every day of the week, 11 am to 10 pm, Sunday through Saturday, so it covers lunch, dinner, and everything in between. Reach the restaurant at 1-850-332-6532 or visit thejellyfishbar.com to see current menu offerings before a visit. Between the sushi bar, the oyster bar, and the steak and seafood menu, the restaurant gives Perdido Key visitors a rare one-stop option when a group can’t agree on what kind of dinner they want, and the daily happy hour makes it an easy stop even before dinner plans are set.
