Owner Russ Graham and his wife, Lauren, are hands-on operators who opened Ambrosia in WaterSound Town Center and built the concept around what Graham calls a “Raving Fans” approach to hospitality, borrowed from author Ken Blanchard’s customer service philosophy. The restaurant even runs a monthly “Charlie Point Award” to recognize staff members who go out of their way for guests, a detail that shows up in the warm, attentive service regulars mention again and again. The bar takes cues from a New York speakeasy, with mahogany wood, copper ceiling tiles, and marble countertops setting the mood for the Smoked Old Fashioned and other crafted cocktails on the menu. Outside, the patio spreads under maritime-striped umbrellas with a direct view of The Pavilion, WaterSound Town Center’s central green space, making it one of the more scenic spots on 30A for a sunset drink before dinner.

On the plate, Ambrosia leans into dishes built for its Gulf Coast setting: Grouper and Pearls pairs crispy Florida grouper with Key lime “pearls,” Redfish Pontchartrain riffs on the classic New Orleans preparation, and Royal Reds, the sweet, deep-water Gulf shrimp prized by locals, show up alongside Wagyu Bread and Prime Steak Rolls for guests who want a taste of the steakhouse side of the menu without committing to a full cut.
