Last Stop Brew Vault

Last Stop Brew Vault opened in March 2024 on Baldwin Avenue and quickly became the kind of taproom locals claim as their own. It is family owned and operated by three couples, six owners in total, several with military backgrounds and day jobs in aviation, who set out to build a hometown gathering spot rather than a typical bar. Jessica and Galen Cooper, Danny and Sonja Barreto, and Jake and Alexa Peters split the work between them, from running the bar and managing inventory to booking the food trucks and designing merchandise, and Galen brings brewing experience of his own as a co-founder of Bayou Brewing Co. in nearby Niceville. The name nods to the building’s past and to DeFuniak Springs’ railroad heritage, and the taproom still holds onto an early 1900s vault left over from the building’s earlier life, along with a beloved old Coca-Cola sign painted directly on the brick wall.

Sixteen taps keep the lineup deep, pouring locally brewed craft beer, cider, and seltzer alongside a rotating nitro selection that runs from light lagers to stouts. Wine and additional seltzers round out the bar for anyone not in the mood for beer, and the staff is known for taking the time to steer customers toward something they will actually like rather than just pointing at the tap wall. Food comes from a rotating lineup of food trucks that park on site, so the offerings change night to night depending on who has set up outside, and the side yard was designed specifically to make room for them.

The taproom is built for hanging out, not just drinking. A pool table, darts, and cornhole keep things lively, and Tuesday night trivia, hosted by one of the owners, draws a regular crowd looking to test their knowledge over a pint. Outlets are scattered throughout the space for anyone who needs to charge a phone, and the dog-friendly outdoor seating means four-legged regulars are as welcome as their owners. Because Last Stop sits right beside the train tracks in the historic downtown, there is even a running bit where a passing train, or a train song playing inside, triggers a discount at the bar, a small touch that ties the taproom directly to the rail line the town grew up around.

The setting adds to the appeal. Last Stop Brew Vault sits in the heart of DeFuniak Springs’ historic downtown, close enough to Lake DeFuniak and the town’s Chautauqua-era buildings that a visit here pairs easily with an afternoon spent walking the lake loop or browsing the antique shops along Baldwin Avenue. It has quickly built a reputation as a locals’ favorite watering hole, family friendly enough for an early dinner with kids and food trucks, but with enough on tap and enough going on after dark to hold its own as a proper night out. Groups traveling together tend to appreciate that there is something for everyone here, from the trivia crowd to parents keeping an eye on kids in the side yard.

Hours run Monday through Thursday from 3 to 9 p.m., Friday from 3 to 11 p.m., Saturday from noon to 11 p.m., and Sunday from noon to 9 p.m., which gives visitors plenty of windows to swing by whether they are looking for a quiet weekday pint or a lively weekend session. Between the deep tap list, the food truck rotation, and the games, Last Stop Brew Vault has quickly turned into one of the best reasons to linger in downtown DeFuniak Springs after the shops close, and it is worth building an evening around rather than treating as a quick stop.
