Nigel’s Bananas is a dessert shop at the entrance to WaterSound Origins offering customizable dipped frozen bananas, ice cream bars, key lime pie, gelato, and soft serve, an easy stop whether you are wandering in from the golf-cart paths of Origins Main Street or wrapping up a beach day nearby. The shop has built a loyal following on 30A for letting guests build their own treat rather than picking from a fixed menu, and the open-air, walk-up counter fits right into the relaxed, barefoot pace of shopping around WaterSound.

The story behind the name is one of the more memorable ones on the Emerald Coast. Founder Simon Sullivan, a chef who had grown weary of restaurant kitchens and shifted into private chef work, says his late father Nigel appeared to him in a dream and told him that bananas would play a significant role in his life. Simon took the message seriously, and with business partner Marla Carter, a photographer with an entrepreneurial streak, turned a farmers-market pop-up from December 2020 into a full storefront. The first Nigel’s opened in Ruskin Place in Seaside at the end of May 2021, and the brand’s cheeky “Going Bananas since 2021” tagline has followed it ever since.

At the WaterSound Origins location, guests pick a base (a whole banana, an ice cream bar, a wedge of cheesecake, or a slice of key lime pie), choose a dip of dairy-free chocolate that Carter has described as the gourmet kind more often found in fine-dining kitchens, and finish with a wall of toppings ranging from crushed cookies to toasted coconut and drizzles. Beyond the dipped treats, the counter scoops gelato and soft serve and pours playful extras like root beer floats and boozy floats made with Prosecco and mango sorbet for the grown-ups in the group. Vegan, gluten-free, and dairy-free options run throughout the menu, so the shop works for mixed groups of vacationing families without anyone feeling left out.

Carter has credited the Emerald Coast’s tight-knit community of women-owned businesses as part of what made the concept possible, and the brand’s growth since that first Seaside pop-up reflects that support. That original Seaside shop, staffed by roughly ten employees at Ruskin Place, proved the concept could work beyond a farmers-market table, and it paved the way for the WaterSound Origins location that followed. Alongside those two Emerald Coast shops, Nigel’s has announced plans to expand well beyond Florida’s Panhandle to cities including Tallahassee, Nashville, and Orlando, and the company is actively courting franchisees who want to bring the concept to new markets. The brand also sells branded merchandise, from embroidered hats to sweatshirts, offers gift cards good at both Florida locations, and keeps an active presence on Facebook, Instagram, and TikTok under the handle @nigelsbananas, where fans post videos of their custom dip-and-topping creations.

As the founders like to put it, “It all started with a dream, no literally,” a line that captures how a late-night vision turned into a two-location dessert brand in just a few years. For now, the WaterSound spot remains a quintessential stop for anyone strolling Origins Main Street in search of something cold, sweet, and thoroughly customizable, a genuinely local answer to the standard beach-town ice cream stand.
